Italian Pasta Salad

Ingredients

  • 8 ounces Daniele Salame, sliced
  • 2 cups Bowtie Pasta, raw
  • 1/2 cup Mascarpone Cheese
  • 2 tablespoons Whole grain Mustard
  • 1/2 cup Mayonnaise
  • 1 tablespoon Italian Seasoning
  • 1/4 cup Chives, chopped
  • 2 tablespoons Basil, chopped
  • 1/2 each Yellow Pepper, diced
  • 1/2 each Red Pepper, diced
  • 1/2 each Onion, diced
  • 1 each Carrot, peeled and diced
  • 12 each Olives, drained and slivered

Method of Preparation

Gather all ingredients and equipment. Cook pasta until al dente. Drain and run under cold water. Blend Mascarpone Cheese, mustard, mayonnaise and seasonings. Set aside. Combine the rest of the ingredients. Add dressing and pasta and mix well.  Makes 10 servings.
