Homemade Pasta Salad with Sopressata

Ingredients

  • 6 ounces Daniele Sopressata sausage, diced
  • 8 ounce package uncooked tri-color Rotini pasta
  • 6 ounces provolone cheese, cubed
  • 1 red onion, thinly sliced
  • 3/4 cup chopped green bell pepper
  • 6 ounce can pitted black olive
  • 1/4 cup Parmesan cheese, grated

Method of Preparation

Cook pasta according to package directions, drain—set aside to cool. In a large bowl, mix the cooled pasta, Sopressata, provolone cheese, red onion, green bell pepper, olives, and Parmesan cheese. Pour desired dressing over the pasta salad, and toss to coat. Cover, and chill 8 hours before serving.
